With Adminimize you have the possibility to hide a lot of areas of the back end of WordPress. It is also possible to hide the settings page of Adminimize. However, the plugin have a fallback to give you always the chance to change them. User there have the capability manage_options have always access to the settings page, on default is this capability inside the Administrator role. IF you don't see the menu item to the settings page, build it via URL wp-admin/options-general.php?page=adminimize-options and after them and change the settings to get an easier way.
