Baking an Evil Cake
Baking is a very common hobby it seems, or maybe hobby is the wrong word, maybe skill or activity is better.
Baking is something that I enjoy doing and am told that I am good at. By that I mean that people ask me to make cookies and will run and jump over to me if I bring some, taking handfuls and asking for seconds. Once the cookies they had were in their stomach, the question would be asked can you make these again, or just in general I would be told that they were great. However there is almost definitely some bias with those reviews being done when they are hungry after a practice, or just by people who know and care about me and wont look me in the face and tell me I suck at baking.

One of the most impressive things I’ve ever made is a really complex cake for one of my best friends, and it was a process to make. It took two days to make, and I might have cried over it a little bit. You know the saying dont cry over spilled milk, well these days it became don’t cry over messed up cake batter. The cake was a raspberry lemon sponge cake initially. Then it became a raspberry lemon angle food cake, cake. The cake consisted of 4 parts. The first part that I made was the lemon curd, which was surprisingly one of the easier things to make, probably the second easiest so middle of the road. Lemon curd is just lemon zest, lemon juice, sugar and egg and you just have to stir it. The next part was the raspberry topping, the topping was made of raspberries, sugar, some lemon juice, and maybe something else that was made around a month ago. One of the worse parts to make was the frosting, the frosting was a cream cheese tart raspberry frosting with white chocolate and the white chocolate was the issue. The reason why it was an issue was because of how potent the flavor was making it taste more like white chocolate than raspberry, when raspberry was the flavor my friend was going for, to try to remedy the flavor I added more raspberries and more raspberry sauce but it still ended up a little too sweet and tasting like white chocolate. Also because of the raspberry parts that I added there became too much and it lost some of the structural integrity that it needed.
Now for the most evil part of this process, the cake. In total I tried to make 4 cakes with one turning out. By turning out I mean it was able to bake. The reason why this was so hard was because the cake my friend wanted was a sponge cake. Sponge cakes for those who don’t know are incredibly finicky, because you have to separate the whites and the yolks, and no yolk can be in the mixture and the tiniest bit will ruin it and make it unstable and unable to bake. In the end I made an angel food cake because it has the same sort of unsweetened taste but it’s a lot simpler.
And that is what I did for my wonderful friend’s birthday, and how it was so evil to bake said cake.
