Mediterranean Eggplant Sausage Casserole
My husband’s delicious culinary invention
One doesn’t need the cooking skills of a top chef to make this simple casserole dish. My husband created it one year when my mother, niece, and I were on our annual summer vacation.
Since he loves to cook, I never felt the need to prepare meals in advance or leave frozen portions behind for him.
My husband was in the grocery store picking up a few items on his way home from work one evening. As he was perusing the vegetable aisle, he spotted an excellent-looking eggplant. This sparked ideas for ways he could prepare it. Adding a zucchini and a green bell pepper, he kept rolling his grocery cart until he reached the sausage section. Ideas began forming, and he knew that we always keep staples at home.
He created this Mediterranean-inspired recipe, and it made it into our “tried and true” recipe folder. We have enjoyed it many times through the years.
