There are a few different task types you can do:

• Killing any mobs
• Killing specific mobs
• Killing mobs of a certain tag
• Bringing items
• Opening Loot chests

1. Only hostile mob kills count
2. You need to open new loot chests, like a dungeon chest that generates loot.
